CHRISTMAS SALADS

This year we had part roast and some lovely summer salads for Christmas.
In fact they were so nice that I wanted to put them on here so that I can keep a record of them for future use....
They were very healthy salads, and I found these recipes in the December 2014 issue of the  Weight Watcher's magazine...

CRUMBED GOAT'S CHEESE, CHERRY & ROCKET SALAD


 1 egg white lightly beaten
1/2 cup (30) pinko breadcrumbs
150g goat's cheese cut into 12 rounds
150g snow peas, halves diagonally
1 tablespoon olive oil,
100g baby rocket leaves
24 fresh cherries, pitted and halved
20g pistachio kernels, chipped
1 and 1/2 tablespoon white balsamic vinegar

METHOD
Line a baking tray with baking paper.
Place egg white in a shallow bowl.  Place the breadcrumbs on a plate.
Dip a cheese round into the egg white, then toss in the breadcrumbs to coat.
Place on the prepared tray.  Repeat with the remaining cheese, egg white and breadcrumbs to coat. 
Place in the fridge for 20 minutes to chill.

Steam the snow peas over a saucepan of boiling water for two minutes or until just tender.  Drain.  Cool in iced water and drain again.

Heat the oil in a large non stick frying pan over high heat.  Cook the crumbed cheese in batches for 20 seconds each side until golden.  Drain on kitchen paper.

Divide the snow peas, rocket and cherries among six serving plates.  Top each with two cheese rounds.  Sprinkle with pistachios and drizzle with the white balsamic vinegar to serve.

Can also use baby spinach leaves instead of rocket... Serves 6 = 4 pro points. 


 BEETROOT AND ORANGE SALAD.
 

 2 Large oranges
2 tablespoons fat-free natural yoghurt
1/2 garlic clove
80g baby spinach leaves
450g tin baby beetroot, drained and cut into wedges
1 sprig of fresh mint leaves picked.

METHOD:
1. Segment oranges over a bowl to catch any juice.  Squeeze orange membranes over the bowl to extract juice.
2. Combine 1 and 1/2 tablespoons of the juice with the yoghurt and garlic in a small bowl.  Season with salt and pepper.
3. Arrange the baby spinach, beetroot and orange segments on a platter.
4. Drizzle with dressing and top with mint leaves.

= 0 Pro Points..

Both of these salads were a hit for Christmas and they are both salads I want to make again..
Have been also making lots of buns these holidays.
With the Thermomix,  they are so easy to do, and as we have had lots of folk around, they soon disappear...

Definitely have mastered these.
  They are very much a favourite in this house....
